2025 New Products

           D&J 600L Demi-Muid         

Since 2016, we (D&J) have implemented an innovating process to produce foudres & cuves. Naturally inheritors of the building technics of D&J barrels, following the philosophy of how the wine has to be aged, this process calls on innovating technics both on the aspects of the bending / toasting and the milling. Therefore, we have gone further in the combination of tradition and modernity with the aim of offering an original signature, different from what is already existing on the market.

 

Encouraged by the comments from our customers about the delicacy of the wines aged in our foudres and cuves, we had the idea to apply the same recipe to the 600 L barrel (also called demi-muid) with the ambition to offer a delicate ageing, without excessive wood and to place the DJ 600 in the competition against eggs - jars amphoras made of concrete, sandstone, clay, or ceramic.

 

Before offering for sales our new born, we have tried it on Chardonnay and Syrah during 2 consecutive years. Our partner wineries were impressed by the wine's harmony, its elegance, texture, and freshness.

 

We're confident this new product will play a key role in meeting the new oenological expectations of cellar masters and winemakers.

The Maverick barrel lives up to its name, embodying an independent and unconventional approach to barrel making. It stands apart, pushing boundaries with its unique character. Crafted from premium 36-month air-dried American Oak, this exceptional barrel undergoes our Hybrid Toasting & Bending Process, a method pioneered through over 30 years of experience and development. This distinctive process uses a specific combination of fire and water to enhance a more complex and elegant flavor profile within the staves, bringing remarkable finesse and structure to the wine.
